Sweet Potato Hash

Comforting, filling, and delicious, this recipe is one of my go-to’s for breakfast with eggs and greens, as a part of a big brunch spread, or for meal prepping for the week! It’s also a great side dish to go with meat and veggies for holiday gatherings or dinner parties! Garlic, rosemary, and caramelized onions are the heroes of this dish and make the whole house smell like Thanksgiving!

INGREDIENTS: (Serves 3-4 people)

2-3 Sweet Potatoes

1 Yellow Onion

3 Garlic Cloves

Fresh Rosemary (optional)

Butter

Olive oil

Salt + Pepper

INSTRUCTIONS:

Prep: Wash, peel and chop sweet potatoes into small cubes. Put the sweet potatoes in a bowl and add a healthy drizzle of olive oil, salt and pepper. Toss it all together in the bowl to make sure the cubes are all thoroughly coated. Remove the outer layers of the onion, then cut it in half and slice it into relatively thin strips. Check out this video for a great trick to avoid crying your eyes out while cutting onions. Mince the cloves of fresh garlic and set aside.

Once you’re done prepping everything, heat up a skillet or pan on the stove on medium high heat. I usually use my dutch oven because I make this recipe in large batches. First, caramelize the onions. (Is there anything better than the smell of caramelizing onions??) To do this, throw in a couple of tablespoons of salted butter and a tiny drizzle of olive oil to keep the butter from burning, then toss in the onion slices and stir to coat them with the butter/ olive oil. Cook until the onions are translucent and caramelized, stirring occasionally. After this, add the sweet potatoes to the pan and stir. I usually put a cover on top for a few minutes to help them cook faster, then take the top off and let them char up a little bit in the pan. Once the sweet potatoes are tender (check by using a fork), stir in the garlic at the very end, just long enough for them to heat up and release a wonderful smell. You can also throw in some freshly chopped rosemary with the garlic for added flavor!

Serve with fried or scrambled eggs, goat cheese, avocado, and a handful of arugula or sautéed kale for a deliciously simple and healthy meal! Or add it as a side to your next big brunch spread, holiday meal, or dinner party!
